That’s why we’re starting a nitrogen-powered revolution in ice cream and other frozen delights. Our unique ice cream concept is reinventing an old classic, using the science of flash freezing to instantly create fantastic desserts that you will love.


At Ice Cream Artisan, we start the ice cream making process with milk and cream and we make all of our ice cream bases from scratch omitting the additives, preservatives, stabilizers, and emulsifiers that you will see in most other ice creams. We source our ingredients locally when possible, and we can tailor our ice creams to your individual preferences.

We mix our bases in small batches and keep them refrigerated as liquids until it’s time to serve them at your event – that’s why our ice cream keeps its incredible flavour and texture so much longer than store-bought ice cream.   Most ice cream starts to crystallize and lose its flavour while it’s being stored at freezing temperatures. Because we create our bases so close to the time they are being served, and then flash freeze them on the spot at your event…our ice cream is more flavourful and much creamier than other ice creams.

That means our ice cream and frozen delights are a denser, smoother, ultra-creamier product. No crystallization means you get smooth, tasty ice cream that hasn’t been watered down.


We may be called “Ice Cream Artisan”, but don’t let the name fool you, we also make other frozen delights! We can prepare all kinds of frozen treats using liquid nitrogen, including frozen yogurt, sorbets, and gelato. No matter what your frozen dessert fix may be, we can accommodate it.

Diabetic or allergic? Special dietary restrictions? We can also create sugar free solutions for diabetics using Xylitol. Let us know if you have any dietary restrictions and we can tailor your dessert accordingly so you can enjoy your frozen treat without having any worries.

We don’t want to leave out our 4-legged companions. We even have a frozen yogurt dog treat available– great for hot summers. Our Nanuuk-sicles are filled with real, fresh ingredients that have been proven to be safe for dogs.


Here at Ice Cream Artisan, we love putting fresh angles on old standards. That’s why Ice Cream Artisan uses liquid nitrogen to freeze your dish into a tasty dessert in mere seconds. You’ll get to watch in awe as the billowing vapours rise from your order and what was a liquid base mere seconds before is now a creamy frozen treat. But how does it work? Why use liquid nitrogen when there are so many other ways to make ice cream? The answer: Because science says to!

Most liquids form crystals as they freeze – and if you’ve ever bitten into a scoop of year-old ice cream in your freezer, you’ll know that the longer the ice cream is subject to temperature variations, the more crystals it will have. Most ice cream freezes slowly. The slower your ice cream freezes, the more time there is for ice crystals to form.

That’s where liquid nitrogen comes into play. Liquid nitrogen can only be stored at temperatures below -196 degrees Celsius, as it evaporates at -195 degrees Celsius. That means when it enters the atmosphere, it boils and evaporates in seconds. By absorbing heat from the surrounding area, it instantly flash-freezes almost anything that comes into contact with it.

When we use liquid nitrogen to freeze our ice cream, there’s simply no time for ice crystals to develop – and the result is the creamiest frozen treat you’ll ever taste.


Yes! Nitrogen is a completely safe, naturally occurring element that won’t harm you when handled properly.

Like many elements, nitrogen can be found in both a liquid state and a gas state. (And if you happen to walk in on the right chemistry experiment, even a solid state!)

As a gas, nitrogen is completely harmless. In fact, nearly 80% of the air you’re breathing right now is made of nitrogen! And if you’ve ever eaten a steak, or an omelette, or even a handful of trail mix, you’ve consumed nitrogen as part of your diet.

Nitrogen is also a major nutrient for all sorts of life forms, including almost every plant in existence and even us humans. Without nitrogen, your body wouldn’t be able to produce new cells or repair itself.

Liquid Nitrogen can cause serious frostbite if a large amount comes into contact with human skin. That’s why only experienced professionals handle the freezing stage. By the time you take that first mouthful of ice cream, all of the nitrogen we used to freeze it has already evaporated – leaving just frozen deliciousness in its wake.
